Today I will be sharing a salad dish recipe that I came across , and turned out to be very fulfilling and tasty at the same time . It seems to be very rare that you get to like a healthy dish ! I’m a very huge fan of Kale and Pesto .

INGREDIENTS:

  • 100g whole wheat pasta
  • 100g kale leaves
  • 1 tbsp pesto
  • 4-5 cherry tomatoes
  • 1/2 handful black olives
  • 20g fetta
  • 1/2 lemon
  • 1 tbsp white wine vinegar
  • 1/2 tbsp extra virgin olive oil
  • 1 tbsp olive oil

 

DIRECTIONS:

  • Fill 500 ml of boiled water into a large pan with a good pinch of salt , add the pasta and cook
  • Place a frying pan on a medium heat , add 1 tbsp olive il , slice the kale into 2cm strips and fry with seasoning , turning regularly until wilted and soft
  • Half the tomato ‘s and olives  into a bowl and crumble in the feta
  • Mix the pesto , lemon juice and vinegar in a bowl
  • Drain the pasta and return to the pan add the dressing and kale to the pasta and serve in pasta bowl
  • Drizzle with extra virgin olive oil to taste

Today was my first attempt of doing a green avocado salad with chia seeds , and it turned out to be a huge success , as told by my family members, the dressing recipe was made up by me,since I always enjoy the sour taste twist dressing , I assumed such ingredients :
1tsp lemon juice
2tsp extra Virgin olive oil
1tsp balsamic vinegar
1tsp flaxseed oil
1tsp ground pepper

Both the whole salad and dressing came out to be really delicious !!

Yesterday I decided to cook my own salad , my latest obsession is on the Quinoa Salad either its with vegetables , roasted peppers , avocado and the list goes on …
But my favourite dish is the one with avocado yes !am a big fan of avocados and can’t seem to have enough.So decided to do my own avocado quinoa salad ie ;rich in all nutrients and helps me keep balanced with all the fibre and protein that the body needs. I bought my quinoa pack from Waitrose food shops.At the back of the quinoa item is a full detailed preparation,cooking,and storage manual.My avocado-Qinoua recipe was bought online from bbcfood.com , and it turned out really yummy ,I was very impressed with the dish since it was my first attempt , btw if you have any delish recipe please do share 🙂
